When I was looking through this recipe, I was kind of skeptical and wonder how it would turn out. You know, the pictures always looks so good but when one makes it, it never turns out the same. Hahahahahahhaah......but I decided to try this recipe and it was good! Hubby had second helping!!!
Ingredients:-
- 2 young coconut juice
- 2 young coconut flesh
- 3 egg whites (beaten)
- 1 tbsp sugar
- 25g hot water
1. Pour out coconut juice and spoon out flesh
2. Dissolve sugar and water. Add egg white to coconut juice and syrup, blend evenly. Filter.
3. Pour the mixture into a large bowl and add the coconut flesh.
4. Steam over low heat for 20 minutes.
Easy peasy!!! A yummy dessert to end a wonderful dinner.
My daughter is my inspiration to cook. I've always had this vision since she's been born is when she has friends over in future, I'll be bustling in the kitchen, making healthy meals and snacks for her and her friends. She now joins me in this journey of cooking though it may be far and few compared to when I first started dabbling in the kitchen.....

Prosperity Oyster with Mushroom
Every Chinese family would have in some form in at least one of their dishes where there will dried oysters. This dish is said to bring happiness and spendour to the whole family. A lot of chopping though but a yummy dish.
Ingredients A:-
- 150g dried oyster (soak in water overnight)
- 4 Chinese mushrooms (soak till soft, remove the stems)
- 1 Chinese sausage
- 120g water chestnuts (peeled)
- 150g celery
Ingredients B:-
- 3 cloves garlic (diced)
- 1/2 tbsp chopped ginger
- 20 lettuce leaves
Seasonings:-
- 1 tbsp oyster sauce
- 1 tsp light soy sauce
- 1/2 tsp sugar
- 1/3 salt
- 1/8 pepper
- 1/2 tbsp huadiao wine
- adequate sesame oil
- adequate dark soy sauce
1. Dice Ingredients A, scald it in boiling water, remove and drain.
2. Heat up some oil in pot, fry minced garlic and ginger till fragrant. Add in scalded INgredients A, stir-fry evenly. Add in Seasonings, stir-fry until fragrant. Dish out.
3. Cut lettuce into round slices. Wrap in fried ingredients. Serve.
Another easy recipe but I really didn't like the dicing though. It's a lot of work. Hahahahahhahahaha.....

Deep Fried Oat Prawns
I loved this recipe and so did hubby. A first time cooking this dish and I could tell hubby loved it because he was just eating and eating the prawns.
Ingredients:-
- 500g prawns
- 5 tbsps fried oats
- 6 chilli padi (chopped)
- 3 sprigs curry leaves
- 2 tbsps margarine
- 100g tapioca flour
Seasonings:-
- 1/2 tsp salt
- 2/3 tsp sugar
1. Trim prawns' antennas and tails. Add in tapioca starch and mix evenly.
2. Heat up a pot of oil, deep-fry prawns till golden prawn, Remove and set aside.
3. Heat up margarine in pot, fry chilli padi and curry leaves till fragrant. Add in prawns and Seasonings and lastly add in fired oats and stir evenly. Serve.

Bean Curd in Thick Soup
CNY Reunion Dinner is nothing like a dinner without soup. So, instead of the regular Shark Fin's Soup, I made something similar but without the shark fin.
- 1 square bean curd (cut into thin strips)
- 100g shredded chicken
- 100g crab meat
- 50g Chinese mushroom (soak and shredded, remove the stumps)
- 50g black fungus
- 4 pieces water chestnuts (peeled and shredded)
- 50g carrots (shredded)
- 1 stalk spring onion (shredded)
- 4-5 bowls stock
Seasonings:-
- 4 tbsps Huadiao wine
- 1 tsp salt
- 1 tsp sugar
- 2 tsps light soy sauce
- adequate pepper
- adequate sesame oil
1. Scald shredded chicken and mushroom in boiling water. Remove and drain.
2. Heat up 1 tbsp of oil, sizzle in Huadiao wine. Pour in stock and bring to boil. Put in remaining Ingredients and Seasonings, bring to boil. Thicken the gravy with starch solution. Serve.
A yummy recipe which my father inlaw absolutely loved and took numerous helpings. Caitlin was busy slurping hers, too. Hahahahahhahaha................
Fish Slices with Salted Egg
I cooked reunion dinner and made 6 dishes. One I had previously cooked a few CNY ago and the other 5 are totally new recipes and thank goodness all turned out pretty well.
- 300-500g red snapper (or any other fish fillet that you would prefer)
- 150g tapioca flour
Seasonings:
- 3 salted egg yolk
- 1/8 tsp salt
- 1/4 tsp sugar
1. Cut fish meat into 2x6cm rectangular thick shapes. Coat evenly with tapioca flour and place on plate.
2. Heat up some oil in pot, deep-fry fish meat over high heat until yellowish. Dish out.
Ingredients:
- 300-500g red snapper (or any other fish fillet that you would prefer)
- 150g tapioca flour
Seasonings:
- 3 salted egg yolk
- 1/8 tsp salt
- 1/4 tsp sugar
1. Cut fish meat into 2x6cm rectangular thick shapes. Coat evenly with tapioca flour and place on plate.
2. Heat up some oil in pot, deep-fry fish meat over high heat until yellowish. Dish out.
3. Rinse salted egg yolks. Place in steamer and steam for 10 minutes. Remove and press finely with tablespoon.
4. Heat up 1 1/2 tbsp of oil over low heat, add salted egg yolk, salt and sugar, stir-fry until fragrant and bubbles appear. Put in fried fish meat and stir evenly. Serve.
An easy recipe with minimal ingredients to produce a yummy dish.
