Cilantro Lime Tilapia

I absolutely loved this dish and I learned about new ingredients like quinoa which is packed with protein and great for dinners if you want to keep the carbs down. That's the thing with Asians, we are always having our dinners with rice or noodles and quinoa is a great replacement. Only thing is that in Asia, it's expensive and thus far can only be found in the Organic section.

Well, I'll need to start digging for more quinoa recipes after this one.

Give a try. Easy to prepare and just easy to cook.


Ingredients:-

- 1 cup Uncooked quinoa

- 2 cup water

- 4 tilapia fillets

- smoked paprika

- 1 1/2 cup of corn kernel, steamed 

- 4 tbsps Lime juice

- 1 tsp Garlic powder

- 1 tsp Onion powder

- 1/2 cup cilantro, roughly chopped

- salt/pepper to taste (I didn't use any and it was still good)



1. In a large pot, bring water to boil over high heat.

2. Once boiling, stir in quinoa, cover and reduce heat to low. Cook until all water is absorbed.

3. While quinoa is cooking, spray a large pan with oil and hear over medium/high fire

4. Sprinkle each side of tilapia with paprika powder generously and cook till white and flaky. 

5. Once quinoa is ready and fluffed, mix cooked corn, cilantro, garlic powder, onion powder and lime well.

6. Divide the mixed quinoa into 4 servings equally and put a fish each on top of the quinoa mix.

7. Serve immediately.


Super yum. Super high protein. A must try recipe.


My daughter is the judge to all my cooking and she was Oh Yum!!!!

Deep Fried Sweet and Sour Siakap

I love fish but I'm generally not a fan of frying them but I know my little one loves deep fried fish especially in sweet and sour sauce and how then can I decline my little one and here's a recipe. Easy and fast and definitely yummilicious according to my girl.



Ingredients:-


- 1 whole fish

- 2 cups oil for frying

- lemon to clean fish


Sweet and Sour Sauce Ingredients


- 2 inch ginger, sliced thinly

- 1 shallot, finely chopped

- 2 cloves garlic, minced

- 1/4 cup tomato sauce

- 1/4 cup chilli sauce 

- 1 tbsp of white vinegar

- 1 tsp sugar

- 1/4 cup water

- 1tsp cornstarch mixed with 1/4 bowl water



1. Clean the fish and pat dry.

2. Use sharp knife to split the fish in the middle like a butterfly and use lemon to clean at the underbelly of the fish.

3. Pour oil and heat at high fire. Once oil is hot, put in the fish to fry. 

4. After fish is deep fried, remove and place on a plate covered with paper towels to absorb the excess oil.

5. Then remove paper towels and leave fish on a serving dish.

6. To make sauce, heat a bit of oil and stir fry ginger, onions and garlic for a minute or two and then pour in the Sweet and Sour mixture and stir for about 2-3 minutes.

7. Add cornstarch mix and stir quickly.

8. Pour sauce over fish and serve.


Done and ready to be eaten. Caitlin nearly polished the whole fish as the fish was also crispy. Nothing is more satisfying watching my own daughter loving all my cooking. I'm a happy mummy.

Steamed Barramundi in Soy Sauce


And yes, I've started back my cooking. Been away for a while as I needed to get a lot of things in order and now that it's more settled, I'm back to cooking and happy like a lark. Partly thanks to my little girl who has been encouraging to go back to cooking, telling me misses my cooking and for the past couple of weeks; I've dabbled with my old recipes and my gift for it is still very much there. And most importantly, the little one is pleased.


So, my first attempt on a steamed barramundi. I'm good at eating them at restaurants but oh well...lets try to make one.


Ingredients:-


- 1 whole fish

- 2 inch ginger, julienned

- 1 shallot, finely chopped

- 2 cloves garlic, minced

- 3 tbsps light soy sauce

- 1 tsp sesame oil

- 2 tbsps Shaoxing rice wine

- 2 tbsps cooking oil

- spring onion or coriander to garnish

- 1 whole red chilli, sliced


1. Clean the fish and pat dry.

2. Use sharp knife to split the fish in the middle like a butterfly 

3. In a large stainless steel plate, place half ginger and then top with fish and balance ginger on top of fish. Pour sesame oil and Shaoxing wine over fish to marinate for 10 mins

4. Meanwhile, fry shallots and garlic with oil. Pour over fish together with oil and add soy sauce with chilli

5. Steam fish for about 10-15 mins. 

6. Use fork to insert into thickest part of fish to see if cooked.

7. Garnish and serve with steam rice

Fish Slices with Salted Egg

I cooked reunion dinner and made 6 dishes. One I had previously cooked a few CNY ago and the other 5 are totally new recipes and thank goodness all turned out pretty well.

This would be an awesome recipe for any occasion.

Ingredients:

- 300-500g red snapper (or any other fish fillet that you would prefer)
- 150g tapioca flour

Seasonings:

- 3 salted egg yolk
- 1/8 tsp salt
- 1/4 tsp sugar


1. Cut fish meat into 2x6cm rectangular thick shapes. Coat evenly with tapioca flour and place on plate.
2. Heat up some oil in pot, deep-fry fish meat over high heat until yellowish. Dish out.
3. Rinse salted egg yolks. Place in steamer and steam for 10 minutes. Remove and press finely with tablespoon.
4. Heat up 1 1/2 tbsp of oil over low heat, add salted egg yolk, salt and sugar, stir-fry until fragrant and bubbles appear. Put in fried fish meat and stir evenly. Serve.

An easy recipe with minimal ingredients to produce a yummy dish.

Broccoli Fish Bake

An indeed simple and healthy meal. Fish...brocolli and m,ost importantly; some creamy condensed can soup mixed into it!!! I could not ask for a simpler meal and my kitchen is clean. No oil...no salt needed. Only note that go easy on seasoning the garlic powder on the fish as it may turn out too salty.



Ingredients:-
  • Garlic powder to season the fish
  • 280g broccoli spears, cooked and drained
  • 450g-600g fresh or thawed frozen firm white fish fillets (cod, haddock or halibut)
  • 305g can Condensed Cream of Chicken & Mushroom Soup (you may use any of your preference)
  • 1/2 cup milk
  • 1/2 cup shredded Cheddar cheese
  • 2 tablespoons dry bread crumbs
  • 1 teaspoon butter, melted
  • 1/8 teaspoon paprika

 
1.Arrange broccoli in 2-quart shallow baking dish. Top with fish. Mix soup and milk and pour over fish. Sprinkle with cheese.

  
2.Mix bread crumbs, butter and paprika and sprinkle on top. Bake at 230 degrees C for 20 minutes or until fish is done.



Yummy...yummy...yummy....for those of you who may feel that it may not be filling enough; have some Butter Rice on the side. :D
